The issue is not related to HTTP/LwIP - it is about WiFi. Please look at this topic for details https://github.com/espressif/esp-idf/issues/7415.
But!
The question is still open: why ESP uses WiFi channel so rare, even having goot radio signal and when other devices doe not have such issue at the same time?..
Maybe, later I will emerge this as an issue in Github, but it requiers for much more detailed debugging, and in my opinion - a special tool (likely hardware one) for relliable WiFi channel utilization is needed.
If someone from Espressif read this and have some things to add - please!! It would be grreat to understand possible limitations with WiFi, because it's hard to ecplain to customers this problem in a context where other devices work fine.
