How to process analog value from fpv-camera on ESP32-Wroom

I have a task to read values ​​from an FPV camera via an analog input (ADC), process these values ​​on the board (ESP32-Wroom-32 devkit) and output them in Pal/Ntsc format (using DAC). I made a working system from soldered AVI output, ESP32-Wroom-32 board and FPV camera. I understand that some value is supplied to the board via 36pin ADC1CH0 (0-4096), but I don't understand how to work with it further. Tell me in which direction to look for information
