Help with which ESP to buy

Hello,
I need advice which ESP to buy for use with a Raspberry Pi.
What am I trying to do?
I am trying to build a grow room control with multiple sensors for soil moisture content, temperature, humidity, light, co2 etc. (you get the idea)
Could someone recommend which ESP would be best suited for such use?
