Hello,
I'm using a node32s, and have set up IO12, IO14, IO27, IO26 and IO25 as digital outputs. When the output levels are set high, IO12, IO14, IO27 work as required, IO26 and IO25 give readings below the 3.3v supply ( IO26 approx. 1.6v and IO25 approx. 3.1v). Noticing that these can also be dac outputs, do I have to disable the dac to use these as normal GPIO pins?

Yes. You should first turn off the DAC function. Then GPIO25 and GPIO26 can be used as common GPIO pin.
