I hate the there are tons of different ESP32 based boards, sometimes unnamed ones, etc., sometimes the pins are mapped weirdly and undocumented...
But i guess that's what you get when the microcontroller is so cheap. And you cheap out on the Chinese clones of boards...

Sounds like you have been bombarded with cheap clones. Stick with the main stream ones.
Can't go wrong with the ones from Espressif, from reputable sources like Digi-key or mouser.
My go to module for most things I make is the M5Stamp ESP32S3 Module

I like this one because I can solder it directly to my PCB.

I usually try to stick with espressif built boards. Have not had a problem yet.
