Hello,
is it possible to use 100k pullup resistor on strapping pin on esp32-c3? Will it work?

Yes. I'd personally use something a bit lower (10K is my go to value) but given the input leakage, 100K should have no issue to pull the bootstrap pins up or down to a proper level.
