the ADC is 12-bit. but it could be affected by:
1. ground bounce due to power amplifier,
2. missing decoupling capacitors, and
3. insufficient settling time.

In terms of power consumption if you are using ESP-NOW and backing off in terms of power, i.e. transmit 0dBm, i think you would get similar performance as Bluetooth.
